Beat eggs.
Gradually add sugar.
Add applesauce and shortening; mix.
Sift together the flour, soda, baking powder, spices and salt; mix well into applesauce mixture.
Let set to rest while heating oil.
Drop from teaspoon into hot oil to cook. The cooked doughnut hole should be about the size of an English walnut or smaller.
In paper bag, mix 1 cup sugar with 1 teaspoon cinnamon.
Drop hot holes into bag; shake to coat.
