Mother's Baked Beans
Mother'S Baked Beans is an moderately easy dinner. Made with 2 c. yellow-eye beans, 1/2 tsp. baking soda, 1 tsp. dry mustard, 3/4 to 1 c. granulated sugar and 1/4 tsp. black pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cover beans and baking soda with water and boil for about 2 hours.
Add mustard, sugar, pepper and salt.
Slice one small piece salt pork to the rind and place in center of the beans which have been placed in a 2 to 3-quart baking dish.
Bake at 325Β° for about 2 hours until soft.
Add water from time to time to prevent drying out.
