Mother's Vegetable Pudding
Mother'S Vegetable Pudding is an impressive dinner. Made with 1 c. chopped raw potatoes, 1 c. chopped raw carrots, 1 c. chopped raisins, 1 c. sugar and 1 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cream shortening and sugar; add vanilla and egg and beat well. Stir together flour, baking powder and salt.
Add to creamed mixture alternately with the milk.
Fold in raisins.
Fill greased custard cups or muffin tins 2/3 full.
Bake at 350Β° for 30 minutes.
Serve warm with the orange sauce below.
