New York Brass Rail Cheesecake
New York Brass Rail Cheesecake is an moderately easy dinner. Made with 3 lb. cream cheese, softened and cut up, 1 1/2 c. sugar, 3 large eggs, 1 1/2 tsp. vanilla and 1 c. half and half (i often use whipping cream), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Blend well in large mixer bowl.
Butter a deep 10-inch spring-form pan.
Line the bottom with crushed lemon cookies. Pour batter into pan.
Place cake pan into a larger pan of hot water, half the depth of the cake pan.
Bake at 450° for 15 minutes, then at 350° for 80 minutes or until completely set.
Let cool thoroughly before removing from spring-form pan.
