Pacific Pot Roast(Crock-Pot Recipe) is an moderately easy slow-cooker meal. Made with 4 to 5 lb. chuck roast, 2 to 3 tbsp. olive oil, 4 cloves garlic, minced, 1 c. sherry and 1/3 c. soy sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Rub roast with 1 tablespoon oil and minced garlic.
Put in glass bowl, add sherry, ginger, pepper and onions.
Chill overnight.
Remove meat, brown in 2 tablespoons oil in frying pan. Put in crock-pot with 1/2 cup marinade, cook on low 7 to 8 hours. Add 1/2 cup more marinade to saucepan and cook juice.
Serve with meat.
