Peachy Bran Muffins
Peachy Bran Muffins is an moderately easy dinner. Made with 1 1/2 c. whole wheat flour, 2/3 c. what bran, 1/2 c. sugar, 1 tbsp. baking powder and 1 (1 lb.) can peaches, packed in juice (undrained), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine flour, wheat bran, sugar and baking powder and stir to mix well; set aside.
Drain peaches (save juice) and purée in blender.
Add juice to pureed peaches to make 1 1/2 cups.
Add peach purée and egg whites to flour mixture and stir until dry ingredients are moist.
Fold in dried peaches or pecans.
Coat muffin cups with Pam and fill 3/4 full.
Bake at 350° for 15 to 17 minutes.
Makes 12 muffins.
