Peggy's Brunswick Stew
Peggy'S Brunswick Stew is an impressive dinner. Made with 10 to 12 lb. chicken fryers or breasts, 6 to 8 lb. beef, meat precooked, boned and skinned, 4 to 5 lb. ground beef, 5 lb. dried lima beans, soaked overnight and 15 lb. potatoes, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Start with pot 3/4 full of water.
When boiling, add beans and water they were soaked in
(precooked or preheated, if desired). After cooking awhile, add potatoes.
Next, add all peppers and onions, blended.
When potatoes are done, add tomatoes.
Add meat and corn last.
