Pierogi Casserole
Pierogi Casserole is an moderately easy dinner. Made with 10 to 12 potatoes, 1 1/2 c. sharp cheddar cheese, 3 oz. cream cheese, 2 sticks margarine and 2 onions, finely diced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Fry bacon.
When almost done, drain off grease and add butter, melted.
Saute onions with bacon and set aside.
Cook lasagna noodles and drain.
Cook potatoes; drain.
Then mash smooth.
Add cream cheese and Cheddar cheese to mashed potatoes, mixing well. Add half of bacon, onion and butter mixture to mashed potatoes, mixing well.
Butter a 13 x 9 x 2-inch baking dish.
Layer noodles, then potato mixture.
Repeat, ending with lasagna noodles.
Pour remaining butter and onion mixture over all.
Cover with foil. Bake at 350Β° until heated through.
