Preheat oven to 325Β°.
In a small bowl, combine crumbs, 1/4 cup sugar and butter; blend well.
Press firmly onto bottom and side of a 9-inch spring-form pan or a quiche or tart pan with a removable bottom.
In a large mixing bowl, combine cream cheese, 1/2 teaspoon vanilla, remaining 1/2 cup sugar and cinnamon; beat until light and fluffy.
Add eggs; blend well.
Stir in pineapple. Pour into prepared pan.
Bake for 35 minutes or until center is set.
While cheesecake is baking, mix sour cream, 3 tablespoons sugar and remaining 1 teaspoon vanilla.
Remove cheesecake from oven.
Spread sour cream mixture on top.
Cool to room temperature.
Chill well before serving.
