Pizza Rice Salad
Pizza Rice Salad is an moderately easy dinner. Made with 1 1/2 c. original minute rice, 1 c. shredded mozzarella cheese, 3/4 c. sliced pepperoni, cut in half, 1 large diced tomato and 2 c. sliced vegetables (as much of green pepper, mushrooms, black olives as you want), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Prepare rice as directed on package; cool.
Lightly toss rice with remaining ingredients in large bowl using 1/2 cup dressing; chill.
Just before serving, toss with remaining dressing.
