Pork Jambalaya
Pork Jambalaya is an moderately easy dinner you can prepare in about 1 hour 46 minutes. Made with lean pork chops, salt and pepper, c. chopped celery, c. chopped scallions with tops and c. chopped green pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Season chops with salt and pepper.
In a small lightly greased ovenproof skillet, brown chops on both sides.
Remove chops; set aside.
Pour off all but 2 teaspoons drippings.
Add celery, scallions and green pepper.
Saute until tender.
Stir in rice, broth and seasonings.
Bring to a boil.
Return chops to pan. Cover; bake in 375Β° oven for about 30 minutes or until chops are tender.
Fluff rice with fork.
Makes 2 servings.
