Raisin Bran Muffins
Raisin Bran Muffins is an impressive dinner. Made with 1 1/2 c. wheat bran, soaked according to directions on container, 1 1/4 c. skim milk, 1 1/2 c. all-purpose flour, 1 tbsp. baking powder and dash of salt, this recipe delivers authentic, satisfying flavors. Preheat oven to 400Β°.
Lightly grease (1 dozen) muffin tin. Stir together bran and milk.
Let this mixture stand for 10 minutes.
Melt margarine and combine with molasses and egg.
Add margarine mixture to soaked bran and blend well.
Add all remaining dry ingredients and beat briefly.
Do not overbeat.
Stir in raisins.
Spoon batter into muffin cups and bake 15 to 20 minutes.
