Ranch Muffins
Ranch Muffins is an moderately easy dinner. Made with 3/4 c. solid vegetable shortening, 1/4 c. sugar, 2 eggs, beaten, 1 2/3 c. all-purpose flour and 1 c. quick-cooking oats (uncooked), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350Β°.
In large bowl, combine shortening and sugar.
Add eggs; mix well and set aside.
In medium bowl, stir together flour, oats, baking powder, baking soda, salad dressing mix and nuts.
Add dry ingredients alternately with buttermilk to egg mixture.
Stir until just combined.
Spoon batter into greased or paper-lined muffin pans, filling each cup two-thirds full. Bake until toothpick inserted in center comes out clean, 15 to 20 minutes.
Makes 12 muffins.
