Reduced Calorie Raspberry Filled Muffins
Reduced Calorie Raspberry Filled Muffins is an moderately easy dinner. Made with 1/4 c. margarine, 1/2 c. firmly packed brown sugar, 1 egg, 1 tsp. vanilla extract and 2 1/4 c. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 400Β°.
Line 12 muffin cups with paper liners. In bowl, using electric mixer, cream margarine with sugar until light and fluffy.
Add milk, egg and extract; beat until combined. Combine flour, baking powder and stir into margarine mixture. Fill each muffin cup with equal amounts of batter.
Using bottom of 1 teaspoon measure make indentation in top of each muffin. Fill each indentation with 1 teaspoon raspberry spread.
Bake 20 minutes or until toothpick inserted in center comes out clean. Remove from pan and cool.
Makes 12 muffins, 120 calories each.
