Refrigerated Bran Muffins
Refrigerated Bran Muffins is an moderately easy dinner. Made with 2 c. all-bran, 4 c. 100% bran, 2 c. boiling water, 1 tsp. salt and 1 qt. buttermilk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix both brans and salt.
Add boiling water; stir.
Add buttermilk; stir.
Allow to cool.
Cream the sugar and shortening. Add eggs, one at a time.
Next, add flour and soda.
Finally, add the bran.
This can be kept in refrigerator 4 to 6 weeks.
(Note: Do not stir after taking from refrigerator to put in muffin tins.) Fill 2/3 full; bake at 375Β° for 25 to 35 minutes.
