Risotto Primavera
Risotto Primavera is an moderately easy dinner. Made with 2 (13 3/4 oz.) cans chicken broth, 1 c. uncooked long grain rice, 1/2 c. butter or margarine, 1/2 c. onion, finely chopped and 1 1/2 c. mushrooms, sliced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In a large pan, bring chicken broth to boil over high heat. Add rice, reduce heat, cover and simmer 20 minutes or until rice is tender and liquid is absorbed.
In a large skillet over medium heat melt butter.
Add onion and cook 3 to 4 minutes until tender. Add mushrooms, carrots and zucchini.
Cook 3 to 4 minutes.
Add asparagus and basil.
Place rice in serving bowl.
Stir in cheese, salt, pepper and vegetables.
