Salsa
Salsa is an easy dinner. Made with 5 lb. ripe tomatoes, 3 c. chopped onion, 1 c. chopped peppers (hot), 1 c. cider vinegar (5% acidity) and 3 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Dip tomatoes in boiling water to remove skins.
Core and chop tomatoes into a large saucepan.
Combine all the ingredients. Bring to a boil, stirring often.
Reduce heat and simmer 30 minutes or to desired thickness.
Immediately fill hot pint jars with salsa and leave 1/2-inch headspace.
Make sure all air bubbles are out of jars.
Wipe jar tops, put on hot lids and seal. Process in boiling water bath for 15 minutes.
