Salsa
Salsa is an moderately easy dinner. Made with 6 lb. firm ripe tomatoes (about 12 large), 1 lb. onions (about 2 large), 1 lb. green peppers (approximately 2 large), 1 large red pepper and 1 1/2 c. distilled white vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel, chop and seed tomatoes.
Allow to drain in a colander. Chop onions and peppers (put through food processor).
In large pot over high heat combine all ingredients.
Bring to a boil. Reduce heat to medium and cook, stirring occasionally, 45 minutes to 1 hour or until thick.
Stir often to prevent sticking.
