San Clemente Curry
San Clemente Curry is an moderately easy dinner. Made with 1 lb. shrimp, shelled and deveined, 1 tbsp. butter, 1 1/2 tsp. curry powder, 1 tsp. salt and 1 medium tomato, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a saucepan, melt butter with curry powder and salt; add chopped tomato and onion.
Cook until soft.
Add lemon juice, shrimp and sour cream.
Heat thoroughly.
Cut avocados in halves, remove seeds and skin and fill centers with the hot curry. Arrange on lettuce leaf.
