Seafood Gumbo
Seafood Gumbo is an moderately easy dinner. Made with 1 lb. okra, sliced, 2 lb. shrimp, peeled, 1 8-oz. can whole tomatoes, 2 onions, chopped and 1 1/2 qt. water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Put oil in large pot and brown flour stirring constantly. Add onions, garlic and parsley and cook until seasonings are soft
Add peeled shrimp and cook until shrimp turns pink.
Add okra and keep stirring.
Cook another 5 minutes.
Add the can of tomatoes, then add about 1 1/2 quarts water.
Add bay leaf, thyme, salt and pepper.
Cook about 2 hours.
Serve over rice.
