Seafood Gumbo
Seafood Gumbo is an impressive dinner. Made with 2 lb. (about 6 c.) seafood (shrimp, oysters, fish, crab or combination of these), 4 tbsp. canola oil, 4 tbsp. flour, 1 c. chopped onion and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Parboil seafood, reserving stock.
Make roux by browning flour in oil.
Add onion and garlic, stirring frequently until slightly wilted.
Add tomatoes, sauce, seafood stock and seasonings.
Stir well; simmer for about 20 minutes.
Add okra and additional stock or water, if necessary.
Bring to boil.
Add seafood; simmer another 10 minutes.
Serve over hot rice.
