Shrimp Jambalaya is an moderately easy dinner. Made with 1/4 lb. bacon, cut in 1-inch strips, 2 onions, minced, 2 green peppers, cut in strips, 1 c. uncooked rice and 1 (16 oz.) can tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350°.

In medium saucepan, saute bacon until brown, but not crisp.

Remove bacon and reserve.

Saute onions in drippings until translucent.

Add green peppers; stir and cook about 4 minutes.

Add rice, stirring until rice is coated and turns opaque.

Add tomatoes, ham, reserved bacon, chicken broth, garlic, salt, pepper and thyme.

Pour mixture into large shallow casserole. Bake at 350° for 40 to 50 minutes or until rice is tender.

More broth may be added as casserole bakes.

Add raw shrimp, pushing down in rice.

Cook for additional 10 minutes.

Serve immediately.
