Sopaipillas(Fried Bread)
Sopaipillas(Fried Bread) is an moderately easy dinner. Made with 1 3/4 c. flour, 2 tsp. baking powder, 1 tsp. salt, 2 tbsp. shortening and 2/3 c. cold water, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sift flour, baking powder and salt into a mixing bowl.
Add shortening and cut coarsely.
Add water gradually.
Mix enough to hold together.
Turn out on a lightly floured board and knead until smooth.
Cover and let dough rest for 5 minutes.
Then roll out into a rectangle about 12 x 15 inches (dough should be very thin).
Cut into 3-inch squares.
Drop a few squares at a time into deep, very hot oil.
Turn squares over 3 or 4 times to make them puff evenly.
Fry about 3 to 4 minutes on each side, until golden brown.
Sopaipillas will puff up like little pillows. Serve hot bread with butter and honey.
