Sour Cream Enchiladas
Sour Cream Enchiladas is an moderately easy dinner. Made with 4 cups grated cheddar cheese, divided, 3/4 c. chopped onion, 1 dozen corn tortillas, steamed, 1/4 c. butter and 1/4 c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine 2 cups grated cheese and onion and roll inside tortillas.
Place in 9 x 13 pan.
In saucepan, blend butter and flour; add chicken broth and stir until thickened.
Stir in sour cream, green chilies and 1 cup grated cheese.
Pour over enchiladas and sprinkle with remaining cup of cheese.
Bake at 425 degrees for 20 minutes.
