South Of The Border Enchiladas is an moderately easy dinner. Made with 6 tbsp. butter, 3 medium onions, thinly sliced, 2 1/2 c. shredded cooked chicken, 3/4 c. canned diced green chiles and 6 oz. cream cheese, diced, this recipe delivers authentic, satisfying flavors. In large skillet, melt butter and sauté onions for approximately 10 minutes.
Remove from heat.
Stir in chicken, chiles and cream cheese.
Spoon chicken mixture on center of tortilla.
Roll up and place seam side down in glass baking dish (13 x 9-inch).
Sprinkle with cheese and drizzle cream on top.
Bake until cream thickens and cheese melts, approximately 20 minutes at 375°.
