Spicy Szechuan Noodles
Spicy Szechuan Noodles is an moderately easy dinner. Made with 1/2 lb. soba noodles, 1/4 c. peanut butter, 1/4 c. warm water, 3 tbsp. soy sauce and 2 tbsp. vinegar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Soba (buckwheat) noodles can be purchased at Skagit Valley Co-op.
They are best because they absorb other flavors.
Cook soba according to directions on package.
Drain and rinse.
Mix sauce ingredients and toss with noodles and vegetables.
Garnish with toasted sesame seed if desired.
Can be served hot or cold. Make as spicy as you want with additional chili oil.
