Trim any fat from steak.
Cut across grain in thin diagonal strips, about 2 inches long.
Combine soy sauce, sherry, honey, ginger and garlic.
Toss with steak and marinate 30 minutes, stirring once or twice.
Prepare vegetables.
Heat oil in large skillet (or wok).
Drain meat, saving marinade.
Add meat to skillet.
Cook quickly over high heat, stirring constantly, just until meat starts to brown.
Avoid overcooking.
Remove meat; lower heat to moderately high.
Add onions, stir-fry 1 minute, stirring constantly.
Add mushrooms and celery; cook 2 minutes. Add reserved marinade; heat 1 minute.
Add meat and pineapple; stir until heated.
Serve at once with rice.
