Sweet Potato Muffins
Sweet Potato Muffins is an moderately easy dinner. Made with 2/3 c. cooked sweet potatoes, 4 tbsp. butter, 1/2 c. brown sugar, 1 egg and 3/4 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 400Β°.
Grease muffin tins or use cupcake papers.
Cream sweet potatoes, butter, sugar, egg and salt.
Sift together flour, baking powder, cinnamon and nutmeg.
Add alternately with milk and mix well.
Add chopped pecans and raisins, if desired.
Bake 25 to 35 minutes, depending on your oven.
(A toothpick inserted in the middle will tell you if they're done.)
