Sweet Potato Muffins
Sweet Potato Muffins is an moderately easy dinner. Made with 1/2 c. butter or margarine, softened, 1 1/4 c. sugar, 2 eggs, 1 1/4 c. cooked mashed sweet potatoes and 1 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cream butter; gradually beat in sugar.
Add eggs, one at a time, beating well after each.
Stir in sweet potatoes and milk. Combine flour, baking powder, salt, cinnamon and nutmeg; add to combined mixture, stirring just until moistened.
Stir in raisins and pecans.
Spoon in greased muffin pans filling 2/3 full.
Bake at 400Β° for 25 minutes.
Yields 1 1/2 dozen.
