Top-of-the-Morning Pancakes
Top-Of-The-Morning Pancakes is an moderately easy dinner. Made with 1 (8 1/2 oz.) pkg. corn muffin mix, 1/4 c. whole bran cereal, 1/2 tsp. apple pie spice, 2 slightly beaten eggs and 3/4 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a medium mixing bowl, stir together muffin mix, cereal and spice.
In a small mixing bowl combine eggs and milk; add all at once to muffin mixture, stirring until blended but still slightly lumpy.
Pour about 1/4 cup batter onto a hot well-greased griddle. Cook over medium heat, 1 to 2 minutes per side or until golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edge.
Serve with margarine or butter and syrup.
Makes eight 4-inch pancakes.
