Vegetable Sandwiches 1 is an impressive dinner. Made with 1 c. finely chopped cabbage, 1/2 c. chopped green bell pepper, 1 large cucumber, chopped, 4 carrots, chopped and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine cabbage, bell pepper, cucumber, carrots and onion, blending well.
In a saucepan, soften gelatin in water.
Add vinegar, Worcestershire sauce, sugar, salt, pepper and paprika. Cook over medium heat until gelatin dissolves, stirring constantly.
Blend into vegetables.
Refrigerate to let flavors meld at least 1 day, preferably 2.
Add mayonnaise just before serving.
Makes about 10 sandwiches or 30 finger sandwiches.
