West of the Pecos Enchiladas
West Of The Pecos Enchiladas is an impressive dinner. Made with 1 lb. lean ground beef, 1 can chopped black olives, 2 (8 oz.) cans tomato sauce, 1 can tomato soup and 2 tbsp. cooking oil, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Brown beef. Add salt. Cool slightly and add 1/2 of the cheese. Add the onions and olives. Combine tomato sauce, tomato soup, tomato paste, water, oil, chili powder, garlic powder and salt. Bring to a boil, then simmer. Dip tortilla in sauce. Lay on plate. Place a heaping spoonful of meat mixture on tortilla. Roll. Place in a greased baking dish.
Pour 1 cup sauce over tortillas. Sprinkle with remaining cheese.
Bake at 350Β° for about 15 minutes.
Serve with remaining sauce.
