Cook brown rice in water for about 50 minutes.

Will yield about 5 to 6 cups cooked rice.

This may be done the day before and then kept in refrigerator.

Saute onions and diced Anaheim chili in margarine on stove or in the microwave about 2 minutes. Mix rice (cooked), onions and chilies with all remaining ingredients.

Bake in a 9 x 13-inch casserole at 350Β° for 45 minutes to 1 hour until bubbly hot.

Serve immediately.
