Apricot Oat Muffins
Apricot Oat Muffins is an moderately easy dinner. Made with 1 1/4 c. all-purpose flour, 1 1/4 c. uncooked old-fashioned rolled oats, 1 tbsp. baking powder, 3/4 c. firmly packed brown sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 400Β° and lightly butter or spray the muffin tin.
In a large bowl, stir together flour, oats, brown sugar, baking powder and salt.
In another bowl, stir together milk, egg, oil and vanilla until blended.
Make a well in the center of the dry ingredients; add milk mixture and stir just to combine.
Stir in apricots or other dried fruit.
Spoon batter into prepared muffin cups.
Bake for 15 to 20 minutes or until a toothpick inserted in the center of one muffin comes out clean.
Take muffins from oven and place on wire rack.
Cool for 5 minutes before removing muffins from cups.
Finish cooling on rack.
