Aunt Mary's Tamales
Aunt Mary'S Tamales is an moderately easy dinner. Made with 1 lb. hamburger (ground beef), 1 lb. sausage (hot swaggerty), 1 oz. mexene chili powder, 1 tsp. cayenne pepper and salt to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix together hamburger, sausage, chili powder, cayenne and salt.
Make into small 1/2 x 2-inch servings.
Combine cornmeal and water to form a mixture that does not stick to hands.
Scoop up enough mixture to cover meat serving.
Roll in tamale papers, which have been softened in water.
Tie with string in middle. Drop into boiling water and cook for 35 minutes.
Serve with chili or alone with mustard.
