Banana Nut Muffins
Banana Nut Muffins is an moderately easy dinner. Made with 1/2 to 1 stick butter or margarine, 2 large eggs, 1 tsp. soda, 2 ripe bananas, mashed and 1 tbsp. vanilla flavoring, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 400Β°.
Grease 12 standard muffin pan cups. Beat together butter, eggs and sugar until light and fluffy.
Beat in bananas until smooth.
Mix flour, salt, baking powder and baking soda.
Add buttermilk.
Mix well.
Add to egg mixture until dry ingredients are just moistened.
Stir in nuts and vanilla.
Do not overmix.
Spoon into pans and fill each cup 2/3 full.
Bake until golden brown, 15 to 18 minutes.
Cool in pans slightly before removing.
