Beef Roast in the Coals
Beef Roast In The Coals is an easy dinner. Made with 3 1/2 to 4 lb. roast (tip) (about 4 inches thick), 1 (6 oz.) jar prepared mustard and 1 c. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Prepare fire so that coals are hot.
Cover entire surface of meat with mustard.
Pat salt into mustard until it won't hold any more.
Insert meat thermometer.
Place meat directly on coals; rake coals around meat.
Cook about 45 minutes.
Turn over and cook 45 minutes (140° rare, 160° medium and 170° well done). Remove meat from coals.
Remove black crust which formed.
To serve, across the grain.
