Broccoli with Macaroni(Broccoli Di Zita)
Broccoli With Macaroni(Broccoli Di Zita) is an easy dinner. Made with 1 1/2 lb. broccoli (fresh), 1 lb. pasta (mezzani), 1 tbsp. salt, 1/2 c. light olive oil and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Broccoli.
Through center and then across, making pieces each piece of broccoli. In large saucepan bring 4 quarts of salted water to a boil. Plunge pasta and broccoli into water and boil until desired tenderness is reached.
"Al dente" is best and usually is 10 minutes.
When done, lift out broccoli-macaroni mix with slotted spoon and place in large bowl.
Reserve 1/2 cup of the water the pasta was cooked in.
The oil and water on top of the broccoli-macaroni mixture toss lightly.
Add salt and pepper to taste; immediately.
4 to 6 servings.
