Cajun Gumbo over Rice
Cajun Gumbo Over Rice is an impressive dinner. Made with 4 cans red kidney beans, 1 onion, minced, 2 c. sliced okra, 1 lb. crab meat and 2 cans ro-tel tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Make a roux by adding heated bacon fat and adding flour. Brown slowly until the color of chocolate.
Set aside.
Saute onion and bell peppers in butter. Cut up sausage and crab meat. Combine all ingredients in a big pot.
Let heat, then stir in roux.
Cover and cook slowly for about 4 hours.
Add seasonings to taste.
Serve over rice.
