Calabasa(Mexican Stew)
Calabasa(Mexican Stew) is an easy dinner. Made with 1 to 2 lb. pork, cubed (can use roast, chops, steak, etc.), 3 to 4 zucchini (yellow squash can be used), 1 large onion, chopped, 1 to 2 large cans tomatoes and 1 to 2 tbsp. cumin, this recipe delivers authentic, satisfying flavors. Boil cubed pork in lightly salted water for about 30 minutes. Drain.
Add canned tomatoes, squash and onion; simmer until vegetables are tender, about 20 minutes.
Add cumin, salt and pepper to taste.
