Chicken Chow Mein
Chicken Chow Mein is an moderately easy dinner. Made with 2 tbsp. butter, 4 tbsp. minced onion, 1 c. whole button mushrooms, 1 1/2 c. cooked chicken, shredded and 1 c. diced celery, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Brown butter in pan slightly. Add onion and mushrooms.
After all are browned, add and simmer for 15 minutes the chicken, celery, broth, soy sauce and sugar.
(Cut down on the sugar.) Blend in the cornstarch and water that have been mixed together until smooth.
Cook the chow mein mixture until slightly thickened and clear looking.
Serves 4.
