Chicken Enchilada Casserole
Chicken Enchilada Casserole is an moderately easy dinner. Made with 3 c. diced, cooked chicken, 2 c. chicken broth, 1 can cream of mushroom soup, 1 (4 oz.) can chopped green chilies (undrained) and 1 (4 oz.) jar chopped pimentos, drained (optional), this recipe delivers authentic, satisfying flavors. Mix together all ingredients except Fritos and cheese.
Cover the bottom of a greased 13 x 9-inch baking dish with 1 cup of Fritos.
Layer in order half of chicken mixture, then 1/3 of cheese.
Repeat, ending with Fritos topped with cheese. Refrigerate overnight or at least for 1 hour.
Bake at 350Β° for 45 minutes.
Serve hot.
Makes approximately 10 servings.
Serve with green salad and garlic toast.
