Chicken Enchilada Soup
Chicken Enchilada Soup is an impressive dinner. Made with 1/2 c. vegetable oil, 1/4 chicken base, 3 c. yellow onion, diced, 2 tsp. ground cumin and 2 tsp. chili powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large saucepan/stockpot place oil, chicken base, onions, and spices.
Saute until onions are soft and clear, about 5 minutes.
In a separate container add masa and 1 qt. of water. Stir until all lumps are dissolved.
Add to sauteed onions and bring to a boil.
Once the mixture starts to "bubble" continue cooking for approximately 2-3 minutes, stirring constantly.
This will eliminate the "raw" taste from the masa.
