Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 12 corn tortillas, 2 c. cooked, chopped chicken, 2 c. broth, 3 tbsp. flour and 3 tbsp. margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Heat tortillas in cooking oil until soft; drain.
Put 1 tablespoon of chopped onion and 2 tablespoons of shredded cheese in tortilla and roll.
Place down.
Melt margarine in heavy skillet; add flour and stir.
Add broth and cook until thick.
Add sour cream, green chilies and chicken and stir until heated.
Pour over tortillas.
Top with remaining cheese.
Cook 30 minutes in a 350Β° oven.
