Chicken Stir-Fry
Chicken Stir-Fry is an moderately easy dinner. Made with 2 tbsp. vegetable oil, 1 lb. skinless, boneless chicken, cut into thin strips, 3 c. cut up fresh vegetables (broccoli, carrot, sweet red pepper, green pepper), 1/4 tsp. garlic powder or 2 cloves garlic, minced and 1 can tomato soup, this recipe delivers authentic, satisfying flavors. In skillet, in 1 tablespoon hot oil, stir-fry half of the chicken until browned.
Remove and repeat with remaining chicken. In remaining 1 tablespoon hot oil, stir-fry vegetables with garlic powder until tender and crisp.
Add soup, soy and vinegar.
Heat to boiling.
Return chicken to skillet.
Heat through, stirring occasionally.
Serve over rice.
