Christmas Cake(Julekake)
Christmas Cake(Julekake) is an moderately easy dinner. Made with 6 to 7 1/2 c. flour, 3/4 c. sugar, 1 1/2 tsp. salt, 2 tsp. ground cardamon and 2 envelopes dry yeast, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Thoroughly mix the dry yeast with 1/3 of the flour and all the other ingredients.
Heat milk with margarine over low heat until very warm (120° to 130°).
Add liquids to dry ingredients.
Beat 2 minutes at medium speed on electric mixer.
Add 1/2 cup of flour. Add eggs and beat on high speed 2 minutes.
Add fruit and stir in additional flour.
Let rise until doubled in size.
Shape into 3 round loaves; let rise and then bake at 375° for 25 to 30 minutes.
