Cold Cucumber Soup
Cold Cucumber Soup is an moderately easy dinner. Made with 2 tbsp. butter, 1/2 large onion, finely chopped, 1 clove garlic, finely chopped, 2 large cucumbers, peeled, halved lengthwise, seeded and chopped and 3 tbsp. all-purpose flour, this recipe delivers authentic, satisfying flavors. Heat butter in heavy skillet and saute onion, garlic and cucumber until onion is tender, about 10 minutes.
Sprinkle with flour.
Stir well.
Gradually stir in broth.
Add salt and bring to boil.
Cover and simmer until cucumber is tender.
PurΓ©e mixture in batches in blender.
Stir or whip in sour cream, dill, lemon rind and mace.
Chill several hours.
