Corn Meal Muffins
Corn Meal Muffins is an moderately easy dinner. Made with 3/4 c. flour, 3/4 c. corn meal, 3 tsp. baking powder, 2 tbsp. sugar and 3/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Sift flour into mixing bowl.
Add the next 4 ingredients and re-sift.
Combine shortening, milk and egg.
Mix well.
Pour all at once into center of dry ingredients.
Stir quickly until dry ingredients are just dampened.
Then stir 3 or 4 times more. Batter will not be smooth.
Spoon quickly into greased muffin pans.
Fill about 2/3 full.
Bake about 25 minutes in a 425Β° oven or until golden brown.
Serve hot with butter.
