Cranberry Nut Muffins
Cranberry Nut Muffins is an moderately easy dinner. Made with 1 c. fresh or frozen cranberries, coarsely chopped, 1/2 c. chopped nuts, 1 tbsp. grated orange peel, 2 c. all-purpose flour and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Prepare cranberries, nuts an orange peel; set aside.
Mix together flour, sugar, baking powder, salt and soda.
Cut in the shortening.
Stir in orange juice, egg and orange peel, mixing just to moisten; fold in cranberries and nuts. Bake 30 to 45 minutes.
Cool on rack 15 minutes.
Remove from pan and cool completely.
Bake in muffin pans.
