Cream of Broccoli Soup
Cream Of Broccoli Soup is an moderately easy dinner. Made with 1-1/2 lb. broccoli, chopped (include most of the stems), 1/2 medium onion, chopped, 1 tbsp oil, 1 potato, cut into chunks and 1 rib of celery, sliced, this recipe delivers authentic, satisfying flavors. Saute onion in oil.
Add carrot and celery and saute for 2 to 3 minutes.
Add broccoli, potato and water.
Simmer until vegetables are quite tender.
Stir in one cup of milk, and purΓ©e the mixture in a blender or food processor.
Return to pan and add 1 cup of milk and seasonings.
If too liquidy, thicken with 1 Tbsp cornstarch.
Mix in 2 Tbsp cold milk and heat.
